Discover the secrets of crafting a perfect salami on a visit to a salumificio in the Itria Valley, where you can learn about all the steps involved in creating this delicacy, including dry curing, marinating, and packing in natural casing. The company, nestled in the beautiful Valle d’Itria, is among the producers who founded the Capocollo Association of Martina Franca, which certifies the authenticity of the production of this traditional salami.

The visit comprises a complete guided tour with a light lunch, featuring a charcuterie board of salami from local artisan production, a cheese board from the local dairy, bread, taralli, focaccia, wine, and water.

This experience includes:
